Tofu and vegetables in sweet chili sauce





One way to get my kids to eat vegetables is to make a stir fry. This one took minutes to be be gulped down. 

Ingredients:
1 onion, cubed 
1 capsicum, cubed 
1/2 zucchini, cubed 
1 bokchoi, cut into big pieces 
1 pkt of Tofu, cubed
1 tsp cornstarch 
Salt
Pepper
2-3 tbsp of sesame oil 

                          Sauce

Sweet chili sauce:
2 tsp sesame oil
4-5 cloves of garlic, minced 
2 tbsp soy sauce 
2 tbsp of chili sauce (I used Siracha)
1/2 tbsp cornstarch 
2 tbsp coconut sugar
Mix all the ingredients for the sauce in a bowl.

Dry the tofu with a towel and add to it some salt, pepper and the cornstarch. 
Heat oil in a pan and fry the tofu till golden.
Remove and keep aside. Now add the onions and stir fry for a minute. Add the remaining vegetables and  saute for 2 mins. Add the tofu and the sauce. The sauce will thicken due to the cornstarch. Serve with some white rice.
