Fenugreek Greens with Poppy Seed Paste Or Methir shaag with posto



Posto or poppy seed is the ultimate comfort food for any Bengali, it elevates any vegetable and turns it to family favorite! This is a pure vegetarian dish and has no onion or garlic in it.




1 bunch Fenugreek greens (methi), cleaned, washed and chopped
1 medium Italian eggplant, cubed
1 medium sized potato, cubed
1/2 cup poppy seed, paste
Salt, 
1 tsp turmeric, 
A pinch of Asafoetida
2 green chilies, slivered
Mustard oil
1 tsp ghee

Heat 3 tbsp. of mustard oil, add a pinch of asafoetida. Next add the potato, eggplant, salt and turmeric. Cover and cook for 5-6 mins. Next add the fenugreek and cook it down for 2-3 mins. Add the rest of the ingredients and cook till the water from the greens have dried. Serve with rice.
