Bengali Shingara filling or Samosa filling



This is my mother's recipe....which my kids love!! This is a typical Bengali recipe, so it doesn't contain any onions or garlic.

Dry Masala:
1 tbsp. cumin seeds (jeera)
1 tsp nigella seeds (kalonji)
1 tsp aniseeds (saunf)
10 cloves
2 " cinnamon
6 cardamoms
4-5 red chilies
10 pepper corns
Roast all of the above on a dry pan and powder and store.

For the Samosa filling:
3 big potatoes, boiled and chopped
1 onion minced
1/2 cup fresh peas
A pinch of fenugreek seeds(methi)
1 tsp ginger chopped
2-3 green chilies chopped
Juice of 1/2 a lime
Salt
coriander leaves chopped

Heat 3 tbsp. of oil, add the fenugreek seeds, next add ginger and fry till browned. Add the onions and fry till light brown. Now add the rest of the ingredients as well as 1 1/2 tbsp. of the dry masala. Mix well. Once cool, you can use and fill in samosas
