I was making a Turkish inspired meal and this recipe seemed to just fit it. It is healthy, and can be made in minutes.
Vinaigrette
2 cloves of garlic, minced
1 small onion, minced
Juice of 1/2 a lime
Salt to taste
2-3 Tbsp olive oil
Chili flakes as per taste
Mix all of the above and keep aside
Eggplant
1 large eggplant, sliced into rounds
Salt
Olive Oil
1/4 cup feta cheese crumpled
2 tbsp. mint, chopped
2 tbsp. cilantro, chopped
Marinate the sliced eggplant in salt. Lightly oil a grill pan and grill the eggplant.
Place on a serving dish. Top with the vinaigrette, herbs and cheese.
