Cashew Cream Tomato Pasta with Spinach



My younger daughter wants me to cook healthy meals for her. This recipe came about that way. It has no flour, cheese or milk which are generally part of an Alfredo sauce. Cashews give the same consistency....and it was a hit with this teen!! I used whole wheat Spaghetti in this recipe.

Cashew Cream:
1 cup raw cashews
2 tomatoes
4-5 cloves of garlic
1 tsp chili flakes
1 tsp basil
salt and pepper to taste
Blend the above with water to make a paste

Pasta
1 tbsp. olive oil
1 cup baby spinach
2 tbsp.  sliced olives
Whole wheat Spaghetti or pasta of your choice to serve 2 persons, cooked till aldente

Warm olive oil in a pan add the cashew cream, stir for a minute or two. Now toss in the remaining ingredients. Cook for a few more minutes and serve.

  1. awesome it seems, thank you. I think its best option for people looking for gluten free recipe, just replace spaghetti with gluten free pasta...
