Shrimp Pad Thai


This noodle recipe can be made in under 30 mins. Really easy to put together on a week night if you have the ingredients handy.
I call this the clean-your- fridge recipe.  Seriously, I customize this based on whatever I have. You can switch the noodles with any other and it would still taste yum. Change the vegetables based in what you have and give it a try.


Ingredients:
Pad Thai rice noodles, cook according to instructions on box
300 gm de-veined shrimp
1 red bell pepper, sliced
1 bok choi, roughly chopped
3 tbsp chopped garlic
1/2 cup chopped spring onions  or green onions
Lime wedges
3-4 tbsp chopped cilantro
1/2 cup dry roasted peanuts
2 eggs
Salt
3 tbsp sesame oil

Sauce:
3 tbsp fish sauce
2 tbsp tamarind water
1 tbsp Siracha or chili sauce
1 tbsp soy sauce
2 tbsp peanut butter
1 tbsp sugar
Mix the ingredients for the sauce in a bowl.



Heat oil in a pan, add the garlic and saute. Next add the bell peppers and bok choi. Add the shrimp, after a minute,  push all of these to the side of the pan. Add some oil and add the eggs. Scramble the eggs and mix all well. Now add the cooked the noodles, sauce, salt, peanuts  and toss well. Top with cilantro, green onions and lime juice.
