Grilled Chicken Sandwich



So here's what's up. I had some left over home made hummus and ground chicken, which I had used to make burgers yesterday.
So this recipe was put together to use up my leftovers...yet eat healthy and NOT boring food!




 Hummus
2 cups cooked chickpeas
2 tbsp. sesame seeds
1/4 cup olive oil
2 tbsp. lemon juice
4-5 cloves of garlic
Salt and pepper
1/2 tsp chili flakes
Whiz all the above, add extra olive oil or water to reach the consistency that you would like.



Herbed Yogurt
4-5 tbsp. of thick yogurt
1 tsp of mint-cilantro-chili paste
salt to taste
1 tsp of olive oil
Juice of 1/4 lemon
Mix all of the above and keep aside

Grilled chicken patty
300 gms of ground chicken
1 small onion minced
4-5 cloves of garlic minced
3 green chilies minced
2 tbsp. of cilantro chopped
salt and pepper to taste
1 egg
Mix all of the above. Form patty's and grill in a grill pan 3-4 mins per side till done.


Multi grain bread
lettuce/greens or sprouts

To make your sandwich, generously spread the hummus over one slice.  Add the chicken patty, top with the greens. Spread the yogurt mix on another slice.  Cut in half and serve.
