 Goan Chicken Cafreal


Chicken Cafreal is a classic Goan dish with fascinating roots. Its origins trace back to the Portuguese influence in Goa, where African soldiers from Mozambique introduced a green herb-based chicken preparation. Over time, Goan cooks adapted the dish using local ingredients like fresh cilantro, whole spices, and green chilies, creating what we now know as Chicken Cafreal - a bold, aromatic, and deeply flavorful green masala chicken.

Traditionally marinated for hours and cooked until slightly charred, this dish is known for its vibrant color and peppery warmth. It’s often served with pao (Goan bread) or fries, making it a beloved coastal favorite.



      





Ingredients

For the Chicken

  • 1 whole chicken, cut into medium-sized pieces

  • Salt, to taste

  • ½ tsp turmeric powder

  • 1 tsp red chili powder

  • 2 tbsp butter

  • 2 tbsp ketchup

For the Green Masala Paste

  • 1 bunch fresh cilantro

  • 3–4 green chilies

  • ½ medium onion

  • 1 inch ginger

  • 4–5 garlic cloves

  • 8–9 black peppercorns

  • 1 inch cinnamon stick

  • 4–5 cloves

  • 3–4 green cardamom

Instructions

Step 1: Prepare the Green Paste

Grind cilantro, green chilies, onion, ginger, garlic, peppercorns, cinnamon, cloves, and cardamom into a smooth paste. Add very little water if needed.

Step 2: Marinate the Chicken

Coat the chicken pieces thoroughly with the green paste.
Cover and refrigerate for 4–5 hours, or preferably overnight for deeper flavor.

Step 3: Cook the Chicken

  1. Heat butter in a wide pan over medium heat.

  2. Add the marinated chicken along with salt, turmeric powder, and red chili powder.

  3. Fry on medium heat for about 10 minutes.

  4. Turn the chicken pieces and spread ketchup evenly over them.

  5. Continue cooking, turning occasionally, until both sides are well cooked and slightly caramelized.

  6. Cook until the chicken is fully done and the masala thickens.


Serving Suggestion

Serve hot with French fries and crusty bread for a traditional Goan-style meal.



NOTE: If you have access to packaged, ready-made Goan Cafreal masala, you can enhance the flavor by adding about 1 tablespoon of it to the marinade along with the fresh green paste. It deepens the spice profile and gives the dish a more authentic Goan touch.
