Poha



2 cups poha, wash, drain and keep aside for 10 mins
1 potato, cubed
1 carrot, cubed
1/4 cup peanuts
2 green chilies, chopped
A few curry leaves
Juice of half a lime
A pinch of turmeric
1 tsp mustard seeds
A pinch of Asafoetida(Hing)
Salt
1/2 tsp of jaggery
2 tbsp oil

Add some salt, the jaggery and lime juice to the poha.
Now heat oil, add the mustard seeds and allow to splutter.
Next add the asafoetida, potatoes, carrots, green chilies, peanuts
and some more salt.  Cover and cook till almost done. Add the remaining
ingredients. Add the poha as well. Sprinkle some water, then cover cook on a low
flame for 2 more mins.
Serve hot.
