Palak Chole or Chickpeas with Spinach



What do you do when you buy a ton of spinach and don't want to end up making more than one dish for dinner? You add spinach to the protein!



1 cup dry chickpeas, soaked overnight
1 onion, chopped
2 tbsp. mustard oil
1" cinnamon stick
2-3 cloves
2 red chillies
1 tbsp. minced ginger
1 large tomato, chopped
2 green chillies, slices
1 tsp turmeric pd
1 tsp red chilli pd
1/2 tsp coriander pd
1 tsp garam masala pd
1 cup chopped spinach
Salt to taste
1 tsp ketchup
1 tsp ghee

Heat oil, add the whole spices and onions. Fry till golden. Next add the ginger, green chillies, dry powdered spices and tomatoes. Fry for 5 mins. Now add the chickpeas, spinach and the remaining ingredients. Add 2 cups of water and mix everything well.
Pressure cook till the chickpeas are soft. Once you open, mash a few chickpeas, this thickens the curry. Serve with rice, roti or naan.
