Sunday mornings generally start off lazily, after breakfast I scramble for what I can make for lunch. Maybe a dish that can incorporate some meat and a vegetable to make it healthy? I had some lamb mince in the freezer, that would make a quick dish. Here it goes.
1/2 lb of minced lamb or kheema
1 tbsp of mustard oil
1/2" cinnamon stick
2-3 cloves
1 large onion, minced
1 tsp of minced garlic
1 tsp of minced ginger
2-3 green chillies, minced
1 potatoe, cubed
1/4 cup green peas, fresh or frozen
1-2 tomatoes, chopped
1/2 tsp turmeric pd
1/2 tsp chili pd
1 tsp coriander pd
1 tsp garam masala pd
salt to taste
2 cups of spinach, chopped
juice of 1/2 a lime
chopped cilantro
Heat oil, add the cinnamon and cloves, Next add onions and fry till light brown. Add the ginger, garlic, green chilies, potatoes, peas and salt. Fry for 3-4 mins, now add the dry masalas and the tomatoes. Fry for 2-3 mins. Add the lamb. Cover and cook for 10-15 mins. Now add the spinach and fry well. Once the water dries up. Add the lime juice and cilantro. Serve with either rice or rotis.
