Aloo Parval Sabji or Pointed Gourd and potato stirfry




I was happy to find pointed gourds in the Indian store, here in Chicago!
Whipped up this stir fry in under 30 mins. That works for a week night dinner.


2 potatoes, sliced
6-7 parval, sliced
2 tbsp. mustard oil or ghee
A pinch of hing or asafoetida
1 tsp cumin seeds
Salt to taste
1/2 tsp turmeric pd
1 tsp red chillie pd
1/2 tsp garam masala pd
1/2 tsp coriander pd

Heat oil and add the asafoetida and cumin seeds. Once slightly browned add the parval. After a few minutes add the potatoes and salt. Saute for a few minutes. Cover and cook till almost done on a low flame. Next add the dry spices. Mix well. Fry on a low flame for 5 more minutes. Serve with rotis or rice accompanied with some dal.
