Zucchini Chutney

 

When you have a limited number of vegetables and you still want to eat dosa! 😀 That’s how this recipe came about.


1 tsp oil

1/2 tsp mustard seeds 

1 tbsp Urad daal 

1 tsp Chana daal( or gram daal)

4-5 red chilies 

1 small onion, roughly chopped 

2 cloves of garlic 

1 medium tomato, roughly chopped 

1 large zucchini, chopped 

A small ball of tamarind or in this case I used 1 tbsp of pomegranate molasses 

1/2 cup grated coconut 

Salt


Heat oil, add the mustard seeds and both the daals. Once the mustard splutters, add the chillies, onion, garlic, tomato and zucchini. Cook on a low- medium flame for 10 mins. Once cool. Grind this to a paste with all the remaining ingredients. Taste it and adjust the seasoning accordingly. You can eat this with dosas.
