Tawa vegetables

 


This literally means an array of vegetables cooked on a griddle. While the stuffing is the same for all the cook times vary, hence I cooked each vegetable separately till held done then arranged them all on the griddle or tawa and cooked on a low flame till done!


Veggies to stuff:
 a few fresh okra,
 1 Japanese eggplant, 
2 small potatoes, parboiled  
a few Parval(pointed gourd)

1 tbsp Panch foron( equal portions of cumin seeds, fennel seeds, mustard seeds, Nigella seeds, and fenugreek seeds), lightly roast this and powder it.
1onion
2-3 cloves of garlic
2-3 green chilies 
1 tsp coriander pd 
1 tsp chili pd 
1/2 tsp garam masala pd
Salt
2 tbsp mustard oil


Coarsely grind the onion, garlic and green chilies. Mix into this salt, coriander pd, chili pd, garam masala pd. 
Make a slit in each vegetable and stuff with the paste. 
Heat oil in a non stick or cast iron pan and add the stuffed veggies without crowding. I cooked each of the different vegetables separately, till almost half cooked. Then I placed them all on the tawa or griddle and cooked them on a medium low flame till done.
