Red Radish & Greens Stir-Fry (Mulo Bhaja)

 This quick stir-fry uses the entire red radish  and greens, making it both flavorful and waste-free. The sharpness of mustard oil and nigella seeds pairs beautifully with the mild sweetness of radish and a hint of sugar for balance.




Ingredients

  • 1 bunch red radishes with leaves

  • 2 tbsp mustard oil

  • 1 tsp black seeds (nigella / kalonji)

  • 1 small onion, finely minced

  • 2 green chilies, finely chopped

  • 1/4 tsp turmeric pd

  • Salt, to taste

  • ½ tsp sugar



Instructions

  1. Wash the red radishes and greens thoroughly to remove all dirt. Finely chop both the radish bulbs and the leaves.

  2. Heat mustard oil in a pan over medium heat until it just begins to smoke lightly.

  3. Add the nigella seeds and let them crackle for a few seconds.

  4. Add the minced onion and sauté until soft and lightly translucent.

  5. Stir in the chopped green chilies and sauté for about a minute.

  6. Add the chopped radishes and greens, followed by turmeric, salt and sugar.

  7. Increase to medium-high heat and sauté, stirring frequently, until the vegetables are cooked and all the released liquid has dried.

  8. Turn off the heat and serve warm.

Serving Suggestion

Serve this stir-fry as a side dish with steamed rice and dal, or alongside a simple Indian meal.
