Dandelion Greens Stir-Fry

This simple stir-fry is a great way to enjoy fresh dandelion greens. Lightly spiced and quick to cook, it makes a nutritious side dish that pairs perfectly with rice.




Ingredients

  • 1 bunch dandelion greens

  • 1 tbsp olive oil

  • 1 small onion, finely minced

  • 1 clove garlic, minced

  • 1 green chili, sliced

  • Salt, to taste

  • ¼ tsp turmeric powder

                                                                   

Instructions

  1. Wash the dandelion greens thoroughly several times to remove any grit. Finely chop and set aside.

  2. Heat olive oil in a pan over medium heat.

  3. Add the minced onion, green chili and garlic. Sauté until the onions turn lightly golden.

  4. Add the chopped dandelion greens, salt, and turmeric powder.

  5. Stir-fry on medium heat, stirring occasionally, until the greens are cooked and all the released liquid has evaporated.

  6. Remove from heat and serve warm.

Serving Suggestion

Serve as a simple side dish with plain rice and dal, or alongside any main meal
