Dandelion Greens Stir-Fry
This simple stir-fry is a great way to enjoy fresh dandelion greens. Lightly spiced and quick to cook, it makes a nutritious side dish that pairs perfectly with rice.
Ingredients
1 bunch dandelion greens
1 tbsp olive oil
1 small onion, finely minced
1 clove garlic, minced
1 green chili, sliced
Salt, to taste
¼ tsp turmeric powder
Instructions
Wash the dandelion greens thoroughly several times to remove any grit. Finely chop and set aside.
Heat olive oil in a pan over medium heat.
Add the minced onion, green chili and garlic. Sauté until the onions turn lightly golden.
Add the chopped dandelion greens, salt, and turmeric powder.
Stir-fry on medium heat, stirring occasionally, until the greens are cooked and all the released liquid has evaporated.
Remove from heat and serve warm.
Serving Suggestion
Serve as a simple side dish with plain rice and dal, or alongside any main meal
