Mustard Greens Stir-Fry
This bold, rustic stir-fry highlights the natural pungency of mustard greens, cooked simply with mustard oil, garlic, and green chilies. It’s a quick, flavorful side that pairs beautifully with rice.
Ingredients
1 bunch mustard greens
2 tbsp mustard oil
1 small onion, finely minced
1 clove garlic, minced
2 green chilies, finely chopped
Salt, to taste
½ tsp sugar
Instructions
Wash the mustard greens thoroughly several times to remove any dirt. Finely chop and set aside.
Heat mustard oil in a pan over medium heat until it begins to lightly smoke.
Add the minced garlic and sauté for a few seconds until fragrant.
Add the minced onion and sauté until soft and lightly translucent.
Add the chopped green chilies and sauté for about a minute.
Add the chopped mustard greens, followed by salt and sugar.
Cook on medium-high heat, stirring frequently, until the greens are tender and all the released liquid has dried.
Turn off the heat and serve warm.
Serving Suggestion
Serve with steamed rice and dal, or as a simple side for an Indian meal.
