North Indian Pepper Chicken Recipe | Spicy Black Pepper Chicken Curry

This North Indian-style pepper chicken is a robust, yogurt-based curry flavored with black pepper, ginger, garlic, and warm spices. Rich yet simple, it’s finished with ghee and fresh cilantro and pairs beautifully with rice or rotis.





Ingredients

  • 1 whole chicken, cut into curry-sized pieces

  • ½ cup yogurt

  • Salt, to taste

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tbsp ginger paste

  • 1 tbsp garlic paste

  • 2 tbsp black pepper powder

  • Juice of 1 lime

  • 3-4 tbsp oil

  • 2 medium onions, sliced

  • 1 medium tomato, chopped

  • ½ tsp garam masala

  • 1 tbsp ghee

  • Fresh cilantro leaves, for garnish


Instructions

  1. Marinate the chicken
    In a bowl, combine the chicken with yogurt, salt, turmeric powder, red chili powder, ginger paste, garlic paste, lime juice, and black pepper powder. Mix well and marinate for at least 1 hour.

  2. Prepare the masala base
    Heat oil in a wide pan over medium heat. Add the sliced onions and sauté until soft and lightly golden.

  3. Add tomatoes
    Add the chopped tomato and cook until softened and the oil begins to separate from the masala.

  4. Cook the chicken
    Add the marinated chicken to the pan and sauté on medium heat, stirring occasionally, until the chicken is cooked through and the gravy thickens.

  5. Finish the dish
    Sprinkle in the garam masala and adjust salt if needed. Finish with ghee and garnish with fresh cilantro.
