Paneer and vegetable Biryani

A quick biryani on a week night without the frills and flounces!

Wash 1 1/2 cup of basmati rice. Cook it in boiling water with 1 tsp salt till almost done. Drain and keep aside.

1 onion sliced
1/2 tsp minced ginger
1/2 tsp minced garlic
2 green chilies slit
1/4 yellow bell pepper cubed
1 carrot, cut into match sticks
2-3 small baby potatoes
1/2 cup frozen baby green beans
1/2 cup cubed paneer
1/4 cup yoghurt
Salt
1 tsp chili pd
1 tsp Shaan biryani pd
1 cup coriander leaves chopped
2 tbsp ghee
2 tbsp oil

Heat oil, add the onion and fry till light golden. Next add the chilies, ginger and garlic.
After a couple of minutes add the vegetables and paneer, salt, chili pd and biryani pd.
Cover and cook for 7-8 mins on a low flame. Now add the yoghurt and cover and cook for another 7-8 minutes. Turn it off.
To assemble in a heavy bottom vessel add half the vegetable stir fry, next add 1 tbsp ghee and half of the coriander leaves. Add half of the rice. Layer again in the same order with the remaining halves.
Cover and cook on a very flame for 1/2 hour. Can be served with raita.
