Mutton And Vegetable Stew

A bowl of steaming mutton and vegetable stew on a cold and chilly night... just perfect! You can add vegetables like sweet potatoes, carrots, peas, cauliflower, potatoes, beans etc. I added what I had at home.

Wash 1 lb of cubed mutton and marinate in 1 tsp turmeric pd, 1 tsp chili pd and 1/2 cup yoghurt. Keep aside for half hour.

2 cardamoms
3-4 cloves
1” cinnamon
1/2 tsp whole pepper corns
1 onion, chopped
1 tsp minced garlic
1 tsp minced ginger
2 green chilies, sliced
1 tomato, chopped
Salt
2 tbsp ghee
1/2 tsp garam  masala pd
1 cup milk
3 baby potatoes
1 large sweet potato, quartered
1 carrot, cubed
1/2 yellow pepper, cubed

Heat ghee , add the whole spices, followed by onions. After 5 mins add the ginger, garlic and chilies,
Fry for 6-7 mins till golden. Next add the marinated meat, salt and fry for 10-15 mins.
Next add the tomato and garam masala pd. Add 1 cup water and pressure cook for 3 whistles. Once cool, open and add the remaining ingredients and a little more water if required . Pressure cook for 2 more whistles.
Garnish with coriander leaves and serve with rotis or rice.
