Cauliflower and potatoes or Aloo gobhi


There are so many variations to this dish. Trying this recipe out. This is perfect for that quick weeknight meal. Goes well with rotis.

1 medium size cauliflower cut into florets, I used Trader Joe’s Baby cauliflower florets
2 medium sized potatoes, cubed
1/2 tsp chopped ginger
1 small tomato, chopped
2-3 mustard oil
1 tsp cumin seeds
A pinch of asafoetida
1 tsp turmeric powder
1 tsp chili powder
1 tsp coriander powder
1/2 tsp Garam masala powder
Salt
1/2 tsp jaggery powder
2 green chilies, slot
2 tbsp chopped coriander leaves

Heat oil, add the cumin seeds and asafoetida. Now add the potatoes, turmeric and salt.
Cover and cook for 5 mins.  Next add the tomato and ginger. Cook for another minute. Next add the cauliflower, chili pd, coriander pd, Garam masala pd, jaggery pd and chilies. Stir it well, cover and cook for another 7-8 minutes or until done. Top with coriander leaves and serve.
