Salmon and Spinach curry

 

This super healthy recipe is ready in 20 mins. Perfect for a week day meal. 


2 tbsp mustard oil or any oil of your choice

1 small onion, sliced

2 bay leaves 

1 tbsp chopped garlic 

1 tbsp chopped ginger

2 chopped green chilies 

1 tomato, chopped 

1 tsp turmeric pd 

1 tsp chili pd 

1 tsp coriander pd

Salt

1 cup chopped spinach 

1/2 salmon, cubed

1/2 cup Water


Heat oil, add the onions and bay leaves. Once the onions are softened, add the ginger, garlic and chilies. Sauté for a minute. Next add the tomato, salt, dry spices and sauté for a minute. Next add the salmon and spinach. Sauté for a couple of minutes. Now add some water( you can add a little more if you need more sauce). Cover and simmer for 5-6 mins. Serve with rice.
