Spicy peanut Soba noodles (Buckwheat/Kuttu noodles)



 I love Soba noodles! These noodles made of buckwheat/Kuttu are gluten free and can be enjoyed hot or cold. I love cold soba noodle salads but my younger daughter prefers her meals hot. So I modified a cold salad to make a hot noodle dish.

Soba noodles portioned for 2 and cooked according to the instructions on the box.
1 onion , sliced
1 red bell pepper, sliced
2 tsp of sesame oil
2 tbsp peanuts
1 tbsp chopped cilantro

Sauce:
2 tbsp crunchy peanut butter
2 tbsp siracha or any other hot sauce
2 tbsp soy sauce
1 tbsp honey
3-4 garlic cloves,  minced
2 tsp sesame oil
Juice of 1/2 a lime
Mix all of the above and keep aside.



Heat oil, saute the onion and bell pepper. Keep this aside. Roast the peanuts lightly.  Now in a mixing bowl lightly toss the sauce, noodles, vegetables and peanuts. Top with cilantro.
