Kulith Usal or Horsegram curry



This curry can be had for breakfast with chapatis. Its quite heaty so best had in the first half of the day.


1 cup Horsegram, soak overnight and sprout
1 tsp mustard seeds
A pinch of Hing or asoefitida
2 cloves of garlic, minced
2 green chilies, chopped
A few curry leaves
1 onion, chopped
1 tomato, chopped
2 tbsp ghee
1 tsp turmeric
Salt

Grind to a paste without water:
1/2 cup fresh coconut
4-5 red chilies
3 cloves
1/2" cinnamon stick
1 tsp pepper corns
A small ball of tamarind
1 tbsp jaggery

Boil the sprouts in water for 5 whistles and keep aside.
Heat ghee, add mustard seeds and hing. Next add garlic, curry leaves and green chilies. Saute. Next add the onions and after a few minutes the tomatoes. Add turmeric pd and salt. Once cooked add the coconut paste and horsegram. Boil for a few minutes and garnish with cilantro. Serve with chapatis.
