Bang Bang Chicken Salad

 


This Asian inspired salad is perfect for the warmer months. 

Ingredients to poach chicken:

1 large chicken breast

1 tsp sesame oil

1 tsp whole pepper corns

2 star anise

2” ginger, sliced

Salt, water


Ingredients for the dressing:

2 limes, juiced

1 tsp sweet chilli sauce 

1 tbsp fish sauce


Ingredients for the sauce:

1/2 cup water

2-3 tbsp peanut butter

1 tbsp sweet chili sauce

2 tbsp light soya sauce

1 tsp grated ginger

1/2 -1 tsp chili flakes( increase if required)


Ingredients for the salad:

1 pk of salad greens

1 large carrot, julienned 

1 cucumber, julienned 

1 cup rice noodles( soak them in hot water for 10 mins, drain)

2 tbsp crushed peanuts 

4 green onions, cut into 2” pieces

1/3 cup chopped mint

1/3 cup chopped cilantro 

2 tsp sesame seeds


Poaching chicken: Heat some water to poach the chicken breast. Add salt, sesame oil, pepper, star anise, ginger and the chicken. Let it come to a rapid boil for about a minute. Then turn the flame off and keep covered for 20 mins. Once cool the chicken can be shredded and kept aside. Reserve the stock for future use. 

Dressing: Mix all together and keep aside.

Sauce: Mix all the ingredients till them come together and resembles a smooth sauce.

Salad: Combine all the salad ingredients. Add the chicken, dressing and half of the sauce. Mix well. Serve the salad with some sauce drizzled on top.
