Curried Quinoa

 


This is a modified upma recipe great for your first meal of the day!

1 tbsp olive oil

1/2 tsp mustard seeds 

1/2 tsp cumin seeds 

1 red chili broken into pieces

1 tsp Urad daal ( can skip if not available)

1/2 onion, chopped

2 green chilies chopped 

1 potato, diced

1/2 cup quinoa 

1/4 cup sprouts ( mung)

1/2 tsp turmeric pd 

Salt to taste

1/2 lime juice

2 tbsp chopped cilantro 

In a pressure cooker, heat oil, add the mustard seeds, red chilli, urad daal and cumin. Once the mustard splutters, add onions and green chilies. Sauté for a couple mins, next add the potatoes, salt and turmeric pd. Sauté for 3-4 mins then add the sprouts and quinoa. Add 2 cups water and pressure cook for 4 whistles on a medium flame. Once the pressure released sprinkle lime juice and cilantro. Serve hot.
