I heard about this Gujarati recipe from a friend and decided to try it out. The results were heartily welcomed by the family. Not only are these tasty but they are extremely nutritious and healthy.
I cup Bajra or Pearl millet flour
1/2 cup yoghurt (you could omit yoghurt and replace it with just water)
1/2 cup chopped fenugreek or methi leaves
1/4 cup chopped cilantro or coriander leaves
1 tsp minced ginger
1 tsp minced garlic
1 tsp minced green chilies
Salt
1 -2 tbsp sesame seeds
1/4 tsp ajwain or carom seeds
A pinch of hing or asafoetida
1 tsp baking soda
Mix all of the above ingredients except the sesame seeds with some water to make a pancake like batter.
Heat a cast iron or nonstick pan and drizzle a little ghee. Pour spoonfuls of batter and make small pancakes. Sprinkle sesame seeds on top. Drizzle some more ghee. Cook on a medium to low flame for 3-4 mins per side. Serve with a chutney or some pickle.
