Ragi Roti or Finger Millet flat bread

 


Finger millets are a gluten free grain, low in fat and easy to digest. They are a rich source of iron, calcium, Vitamin D, and amino acid. They help in battling anemia and also anxiety and insomnia. This is a easy way of making the rotis. 

2 cups Ragi flour
2 green chilies chopped 
1 small onion, minced 
1 spring of curry leaves, minced 
1/2 cup grated carrots 
Salt
Pepper
Water
Ghee or oil for frying

Mix all the ingredients to make a soft and wet dough that can be spread. Use a cast iron pan, drizzle some ghee or oil, next take a handful of the dough and spread it with your fingers on the cold pan till it forms a circle. Make a  small whole in the center. If the dough sticks to your hand you can dip your fingers in some water and continue to spread thin.
Now drizzle about a tsp of ghee in the center and all around. Start the heat and cook for a few minutes. Turn and cook the other side as well for a few minutes.  This can be eaten with a vegetable of your choice or any Indian pickle.
