Vegetable Chop

This is a popular street food snack served in Bengal.
An easy way to get the family to eat beetroot and carrots and also makes a delicious starter at your party.

2 tsp oil
1-2 green chilies, minced
1” ginger, minced
1 large beetroot, grated
2 carrots, shredded
2 large potatoes, boiled and mashed
Salt, pepper
1 tsp chili pd
1 tsp garam masala pd
1 tsp coriander pd
1/2 cup roughly chopped peanuts
1/2 cup chopped coriander leaves
1/2 lime
1 cup or as needed of Semolina or rava
1-2 tbsp oil for frying patties

Heat oil, add the green chilies and ginger and lightly brown. Next add the beetroot, carrots, salt, pepper, chili pd, garam masala, and peanuts. Cover and cook for 10-15 mins on a medium flame.
Mix with mashed potatoes, coriander leaves and juice of the lime. Taste to adjust salt and lime. Add more if required.
Now shape into patties dip into semolina and pan fry on a non stick fry pan with some oil. Fry for a few minutes on both sides and serve.
