This classic recipe has been tweaked to be made with whatever vegetables are available instead of the
traditionally used pumpkin, ridged gourd, cauliflower stems etc.
2-3 tbsp mustard oil
1 tsp panch foron( mixture of cumin seeds, fennel seeds, mustard seeds, nigella seeds, fenugreek seeds)
Paste of ( 2 tbsp poppy seeds, 1 tbsp mustard seeds and 2-3 green chilies)
1 potato, cut into batons
1/2 eggplant, cut into batons
1/2 sweet potato, cut into batons
10-15 green beans, halved
1/2 cup shredded carrot
Salt
1 tsp jaggery (for those who like a little sweetness)
1 tsp turmeric pd
Heat oil, add the panch foron. Next add the vegetables, jaggery, salt and turmeric. Cover and fry well for 6-7 mins. Add the paste next and mix well. Cover and cook till the vegetables are well cooked. Garnish with a few drizzles of raw mustard oil.
Serve with rice
