Healthy Bean Salad with Zucchini Salsa | Gluten-Free Recipe

 This colorful bean salad combines creamy Royal Corona beans with crunchy vegetables and a fresh, savory zucchini salsa. The zucchini is lightly sautéed with garlic, shallot, and jalapeño before being blended with cilantro and white wine vinegar, creating a bright dressing that brings the whole salad together. Ingredients

For the Bean Salad

  • ½ cup Royal Corona beans, soaked overnight
  • ½ cup purple cabbage, thinly sliced
  • 1 cucumber, diced
  • 1 ear of corn, roasted and kernels removed
  • Salt, to taste
  • Black pepper, to taste
  • Olive oil, for drizzling

                                                                 

For the Zucchini Salsa

  • 1 zucchini, sliced
  • 2 cloves garlic
  • 1 shallot, sliced
  • 1 jalapeño
  • 2 tbsp olive oil
  • ½ bunch fresh cilantro
  • 1 tbsp white wine vinegar
  • Salt, to taste
  • Black pepper, to taste

Instructions

Prepare the Beans

  1. Soak the Royal Corona beans in plenty of water overnight.
  2. Drain and pressure cook until the beans are tender but still hold their shape. Allow them to cool.

Make the Zucchini Salsa

  1. Heat 2 tbsp olive oil in a pan over medium heat.
  2. Add the sliced zucchini, garlic, shallot, and jalapeño.
  3. Sauté until the zucchini softens and the vegetables are lightly browned.
  4. Transfer to a blender or food processor.
  5. Add the cilantro, white wine vinegar, salt, and pepper.
  6. Blend until you have a slightly coarse, salsa-like consistency.

Assemble the Salad

  1. Place the cooked beans in a large bowl.
  2. Add the sliced purple cabbage, diced cucumber, and roasted corn kernels.
  3. Season with salt and freshly ground black pepper.
  4. Add the zucchini salsa and toss gently until everything is well coated.
