Potato and Squash in a yoghurt curry





 2tbsp ghee

1tsp cumin seeds 

1 tbsp minced green chilies 

1 tbsp grated ginger

1 yellow squash and 1 zucchini, diced

1 tbsp coriander pd

1/2 tsp red chili pd (or according to taste)

1/4 turmeric pd

Salt to taste

2 medium potatoes, boiled and roughly squashed with hand

1/2 cup plain yoghurt

1 cup water



Heat 2 tbsp ghee, add cumin seeds, green chilies, ginger  and diced squashes. Next add  coriander pd, turmeric and chili pd. Fry for 5-6 mins. Next add salt and the potatoes. Fry for 5-6 mins. Lower the flame completely.

Mix together the yoghurt and water and add this to the curry above. Simmer on a low flame stirring now and then for 10 mins. Garnish with chopped cilantro and serve with rice or rotis.
