Beetroot chutney

 


A great way to sneak in the goodness of beets into your first meal of the day!


Ingredients to grind:
1 large beet, peeled, sliced and boiled(reserve the water)
1/2” ginger
1 cup grated coconut 
1/2 cup roasted gram daal
2-3 green chilies 
1/2 tsp pepper
Salt

Ingredients for tempering:
1 tsp ghee
1/4 tsp mustard seeds
1/4 tsp cumin seeds
1 red chili 

Grind all the ingredients listed above to a smooth paste. You can use some of  the reserved water that was used to boil the beet to grind the chutney to a smooth paste. 
Heat the ghee for tempering, add the spices. Once the mustard seeds splutter add this to the ground chutney. Mix and serve with idlis... or have it as a side to your meal.
